Method

   Whisk yolks with sugar until pale, then beat in mascarpone.

   Whisk whites stiff and fold in.

3. 3

   Dip biscuits in coffee and marsala and layer with the cream.

4. 4

   Chill 6 hours and dust with cocoa.
